I do think it would be a fun turn for the industry if a bunch of high profile indies went exclusive to EGS for like 6 months to a year. I'm not exactly keen to help out the guys in charge of Epic, but I would love something to give Steam pause.
It is VAT, but it's paid by the merchat, so you won't skip it. VAT applies in the country of purchase, not where you are as a developer.
Steam takes sales tax as part of your price - if you're selling for $10, $2 of that is gone to sales tax before Steam's cut, then you pay income tax on the rest.
Sales tax averages out globally to about 20%, so I factor that in before income tax, as that's what you actually get paid out.
Definitely a good idea. I'm aiming to launch on as many platforms as I can too, just to cast as wide a net as I can.
To be fair, releasing on EGS and GOG these days isn't hard, it just isn't where the majority of people are, unfortunately. Keeping 88% on EGS is definitely a major upside though.
