I think the history of Zebulon Vance in Statesville is genuinely interesting-- you can see his house from the outside but not sure its open and anyway the history stuff is all garbled up in Lost Cause-ism/white supremacy
Also Statesville City Hall is one of my favorite buildings of all time.
Statesville did a pretty admirable job rebuilding the downtown streetscape a few years back, I really love going down there for an afternoon now, grabbing a beer... Mitchell Community College campus is pretty too. My fantasy if I won the lottery is to buy the downtown clock tower and move in.

I haven't spent a ton of time in Salisbury but would like to-- legitimately very important colonial town. Can definitely recommend the NC Transportation Museum in Spencer.
