Did you know that by default you cannot add a #MicrosoftPurview sensitivity label to a record in Microsoft 365? Makes sense, I guess; As records normally cannot be edited, metadata included. But you can add these labels using PowerShell: Set-SPOTenant -AllowSensitivityLabelsOnRecords $true.
