Easy Brown Rice Risotto with Mushrooms and Fresh Oregano Creamy baked brown rice risotto with minimal stirring required! Brown rice risotto is healthier and so delicious. Feel free to change up the flavors!

I made this non-traditional baked brown rice risotto and it was amazingly better than those words sound together. 😋

Unlike the recipe, did put the rice the pot a few minutes before the stock. I also have a patch of fresh oregano - super yummy.
