We made a new lager beer! "Indomitus" for wild and untamed. Brewed with a wild yeast strain from Patagonia! This is the result of a super fun collaboration (and lots of hard work) with Francisco Cubillos in Chile (@fcocubillosr.bsky.social) and Andrés Furukawa at the Nils Oscar Brewery in Sweden.

After many attempts, we finally managed to hold a fantastic lab retreat with PhD students, postdocs, young PIs, and former lab members.

Panel C depicts a field experiment with the chambers. Hola! 😅 Can I just add something? ‘The Holarctic S. eubayanus are poor beer makers’ since they lack the MAL genes. Patagonian S.e. have multiple MAL copies and make ‘average’ beers 😂. Glad to see S. eubayanus talks!
