I've been using SolidWorks for CAD design for almost 20 years now and still the best I can tell the rule for what is/ is not hidden when you add parts in different configurations is: if you want it to appear only in one it appears in all of them and if you want it in all of them it appears in one

I don't know if this is helpful at all but for knee edges you may be able to start with the basic shape then emboss tool and then add some chamfers to sort of carve it. The tricky part is just making your 2D sketch to emboss from...
