Nice. Couple things you can try with Chuck. Sear it before you SV to help develop flavor. I've done a brief pre-smoke too. Also you can cook it much lower, like 131F, and it will be a firmer texture and less braise-y. Good for sandwiches, especially if it's a thicker shape. Have fun!
