Tahoe 26.3 here. The "downloaded from the Internet" configuration is more restrictive now, but I've initially installed Polypane from the website download without any issue.
I think the signing issue started at the same time as the auto-update thing, when I manually downloaded the new version.
I guess the long history makes it feel less like a trend food

For what it's worth, I had to de-quarantine the app (from the terminal, then from the Privacy settings) after downloading and moving it to my apps folder. That's been the case for a few versions.

Most default ISP DNS are terrible and/or surveillanceware.
Coming out from a VPN elsewhere in the world lets you avoid it. You can probably ping the missing Homebrew URLs successfully from Firefox, if it has DNS over HTTPS active.

In my experience, the parts I like most in early Next are now in Nuxt, or plain Vue, depending.
If you've made a back-end choice where you already like the rendering/template logic, I'd say Next.js is immediately overkill.

Also (again, limited knowledge) I think we produce more glutamate digesting proteins than we usually intake even in g-rich foods, so high-g diet might be enough to get stuck in an accumulation loop, where if your dietary is low enough, you can get by processing it on diminished GABA conversion.
Don't know enough for the collagen disorder side, but the enteric system has its own separate glutamate receptors. If it's close to inflammation and it reacts to dietary g, anxiety signals from gut neurons are as you describe for me. I guess you wouldn't need dietary g moving further if ENS flares.
