Going to be a bit basic with these two, as they have very similar vibes, but I give you the wrapround paperback edition of Gene Wolfe's Shadow Of The Torturer and Clive Barker's Weaveworld.
The original artwork for Isaac Asimov’s book Robots and Empire, art by Michael Whalen. Robots Daneel Olivaw (you can just see a little mechanical piece in the gap in the lower back of his shirt, but otherwise appears human) and Giskard Reventelov (the obviously mechanical being) are shaking hands. In the story, this is when they basically tell each other that they would die in the other’s place if necessary.

I love Michael Whelan’s art on Isaac Asimov’s books, but Robots and Empire in particular gets to me, because it’s portraying a specific emotional moment in the book (despite being two robots who ostensibly have no emotions).
One of my favorites. Perhaps the best depiction of Fafhrd & the Gray Mouser ever.

I'm a big fan of Michael Whelan's work for King's Dark Tower series. From the original cover and plates for the Gunslinger and then the cover & key art for the finale.
(The Dave McKean stuff for Wizard & Glass was great too but I can't find clean clear art for the originals.)

I really love the 2000 rerelease covers of the Dragonlance Chronicles with art by Matt Stawicki. He used really bold, saturated color when a lot of fantasy covers were less so, and it really made them pop
