Jamaican Jerk Seasoning
Our Jamaican Jerk Seasoning is the product of talking with several West Indian friends and a LOT of taste testing. We couldn't settle on a weak product. The shame of it all would have been too much. We'd be banned from girls night for months - no thank you! So we startedβ¦
A great book to start with is Linda Ziedrich's The Joy of Pickling. Despite the name there are a whole bunch of fermentation recipes in there. I love that book. It was a big help when I first got into pickling and fermenting bc it has 300 recipes and a whole lot of advice

it looks good, especially for a first time! for the next time, I would suggest to get a smaller jar. You want all the CO2 that the sauerkraut generates to push out all the oxygen. Your brine looks great though. Enjoy!
I swear I am never ever, and I mean never ever EVER grinding bay leaves again. They lie there in the bottom of my spice grinder in these great big old tough pieces full of spite and hatred
The weather was in the 60s today, and it was so nice I couldn't resist a walk. Two pluses came out of that: I donated a bunch of old but still good books to the Little Free Library, and found an empty clean 2 litter bottle for my irrigation project. Huh, it IS good to leave the house sometimes!
they are indeed so scary - I cut myself once when I looked away real quick - but they work SO WELL. in the summer I make half gallon jars of pickles and I could never do it without one.
Happy Pickling!

Hot peppers update:
These are about six weeks old. I've been giving them half strength fertilizer once a week. Might up that to twice, but I need to be careful not to overwater. Most of these are ghosts, but there's some RB003, some 7 Pot Cinders, and one Sugar Rush Peach

don't usually see ginger bugs with airlocks, but if it works for you, enjoy
Kosher Dill PickleΒ Seasoning
Traditionally, kosher dill pickles are made by fermenting cucumbers with dill in a salt brine. But with this Kosher Dill Pickle Seasoning, you can get that same flavor whether you use vinegar or salt water. If you remember delis with cold crisp pickles in a barrel,β¦
Pickle Seasoning
So there's several ways to make pickles. Lots of people love making a good pickling spice pickle. Pickling spice is usually a blend of spices like coriander seeds, garlic, and dill seed, plus others, depending on who makes it. It originated in Jewish cuisine and has been used toβ¦

Spring is coming, and that means 2 things:
1) Spring Training (go Phillies)
2) PICKLING
I have been eyeing the pickling cucumbers and recently made kosher dill pickles. I think I'm going to post some more pickle recipes on my blog. Bring out the vinegar and let's GOOOO #pickling #spring #Seasoning
you could make cowboy candy (candied jalapenos) or pineapple jalapeno jelly! both are delicious
For the last few days I've been dreaming, yes dreaming, about planting Death Spirals. Guess my head is already planning next year's garden?! πΆ #hotpeppers #heybrainslowdown
...so I usually keep it short. These product descriptions are supposed to be 300 words! It's killing me. So I decided to try one and it spit out the blandest copy imaginable. I felt so embarrassed...I drained a wetland for that? I'm sticking to my short & sassy blurbs. SEO, we lost this one
I'm not a fan of AI, at all. It sucks up a bunch of natural resources to spit out lesser copies of original things. But today, as I looked at my pitiful product descriptions, I really thought about installing one of those AI plugins. One of my personal autistic powers is being concise....
No, soap and water will work fine! Wash them well in hot water.
keeping pickled vegetables is easy - just keep them in a closed jar. fermented vegetables are a little trickier - you have to worry about air exposure because mold and kahm grow more easily in those. plan to use smaller containers if you want to open them a lot, or keep everything in the fridge.
Potted up 28 seedlings this weekend, and promptly knocked two of them over. Dirt everywhere. My cat cried - but he cries about everything. At least the 2 I lost were ghosts, which I have plenty of, and not an Armageddon, where I only have one and crouch over it like Smaug with his hoard
Pepper Update 2/20/26
Everything is sprouting like mad. I have fans on (although I have to rotate one of them between shelves) and the stems are stiffening. Still trying to figure out what to sell and what to put in the ground...a pleasant problem to have #hotpeppers πΆ
A Beginnerβs Guide to Learning About Fermented HotΒ Sauce
When I started learning how to ferment, I tried fermenting every vegetable under the sun. Cabbage, ginger, mustard greens, tomatoes, cucumbers.. you name it, I salted and brined it. Then I took one of the beginner fermenter's three paths -β¦

Pepper seedlings. Five are in metal pots, one is in a red solo cup. The plants have multiple leaves and are under two tube grow lights.
I keep checking my peppers because they look so pretty! Here are the most successful ones I've grown from seed so far - those RB003s are fast growers. Watered 2x/week, fertilizer 1x/week
Blood Ghost Peppers are poppingΒ up!
I keep looking at my plants knowing full well I won't see anything new. Today I looked at them a few times in the morning, and about the third time I actually noticed a new plant shooting up. Then I noticed one in the back, and another one off to the side. Theβ¦
Six chocolate chip walnut cookies on a silicone liner on top of a baking pan
Tonight for the Super Bowl I made my Ghost Pepper Chocolate Chip Walnut cookies, because for the first time this year I didn't have to leave out the spice. They came out pretty nicely - they always look better than my terrible pictures lol

17 seedlings planted in plastic cups. The cups are on a green plastic mat. Five are tagged with "Ghost?" and two are tagged with "Ghost or Primo"
Today I potted up a bunch of seedlings that were getting kind of leggy...and quickly realized I was almost out of space! I ended up purging a bunch of pots, planters and exercise tape π€·πΎββοΈ in order to make room.
Tagged the ones I was unsure of. Lesson learned to be more patient next year
