Signal offers the option to delete messages within a certain time frame, but this has to be enabled. I doubt these clowns had the forethought to enable this feature.
Also if the devices themselves aren't secured, any who picks up that phone or tablet, or accesses that computer will be able to open that app and review recent messages sent.
The signal app, unlike traditional SMS messaging apps, encrypts it's messages. Although more secure than SMS messaging, I doubt it's infallible, especially when unintended recipients are added to the chats.

There's a very real chance they will restrict access. Install a VPN on your devices. You can change your location in your VPN app to another country that DOESN'T restrict internet access. I have been prepared for this since January 20th.
