Bread’s so expensive I thought I’ll order in some flour & get a sour dough starter going. A bag of flour later I figured out the timing in this heat. 24hrs feed, 6hrs feed put it in the goddamned fridge! I’m on the 3rd attempt to keep it from turning. The Poilâne method has never failed before.

I made seitan from vital wheat gluten the other day. It was so easy and tasty! Never eaten so well since I learned to cook whole food vegan. Sauces where you just chuck bundles of herbs or a whole capsicum in! No more oils and emulsifiers. So good.
