We refined the prompts, but I think the most important part was to have the feedback from the collaborating Roma-led associations. We also discussed the quality of the resulting images with participants when we were implementing a storytelling method.

We used Midjourney for it. It had several biases (Roma stereotypes), but after several trials and errors we managed to prompt some decent images.
Participants really enjoyed the activity: we used those images to do storytelling and design recommendations to face the challenges of the digital era.

I share your opinion. One day we are investing in the "best" AI tool, the next day another takes away the title and you are already obsolete.
Although, some claim that prompt engineering became the soft skill of this decade, so with the best or the worst developed AI, we have to learn about it.
