I slice and freeze, not whole.
It is easy. Get your starter going.
Once useable 1 portion levain, 2water and 3 flour. So 1:2:3.
I stretch and turn every 30min x6 then bulk ferment in the fridge 24/36 hours. Bake in a le creuset lid in 25min/off 20 min, with damp scrunched greaseproof as a dough sling.
No as is- enough fat content
