They’re getting a bit obscure in Australia too, tbh. Fairly old-fashioned and seem very faff to make.
There’s a bit of variation, but my most familiar version is a shortcut pastry base, a layer of raspberry jam, “mock cream” filling and then two-tone icing.
Incredibly sweet but oddly comforting!
