So if you have a document in ODF format, you would just need to unzip the file and you would see your text within an XML document, which is ugly, but your text would be there.

There are several applications that read and write odf files. The best known is LibreOffice, which is also an open source, free to download and use (but you can make a donation).

ODF (Open Document Format) pretty much does that. From what I understand ODF files are basically compressed XML documents. The compression tool (ZIP) is open source free utility, not owned by any single company.

The key benefit is that you would always be able to retrieve the text.
