It was WILD. Melt in your mouth, perfect temp.
Oh God I wish I knew the pounds. It was a standard Culver Duck brand. We dry brined it for 24 hours and then smoked it for about 2.5h total. Took a little longer than recipe said but it was freezing out so we bumped the temp up a little.
It was not crispy unfortunately, but not rubbery. I also forgot to pick the skin per instructions and I wonder if that was the trick. We may also just try broiling it next time.
Smoked a duck for the first time yesterday, and it was absolutely divine.

This is already the best PAX of my life. I just realized my best friend of 15 years - that I haven't seen in forever - was sat a table away from me. We had no idea either of us would be here. I have never sprinted faster for a hug.

On the plus side, I swapped therapists a couple weeks ago to try somatic & IFS and when we've talked about my experiences in this space, it's always been very validating to hear someone else say how hellish it must have felt, in amidst the feelings of success and even joy.
