Hopefully from that clip those are isolation valves on the ends of the white pipes, something like these. I would tread carefully as it doesn’t look too clever. The isolation valve only needs a quarter turn to isolate the water.

If you are lucky there will shut off valves under the sink 🤞

If it’s a modern mixer tap then the bottom should look something like this. Tap is held in place by the long nut on the threaded rod and the water is connected via the flexible taptails, if you have the right tools and confident of not causing a leak then shouldn’t be difficult.

Been off the tools for a long time now, these kind of people have always given decent tradespeople a bad name, hope you manage to get it sorted, unless he has properly screwed it up turning the tap around shouldn't be that difficult.
