Yesterday I made a vegan Spanakopita from a vegetarian cookery book called βPlantasiaβ. It added Kashmiri spice blend to the spinach and cheese mix, along with green peppers and red onion. Possibly one of the most beautiful things Iβve ever cooked and didnβt take a single photograph.
One of the few positives about the last decade or so is people are starting to get hip to the fact that the Luddites were right all along.
