All you do is wash it and dry it. Cut the roots off and ducaed. Cut the stems into pieces and tear the leaves.
Flash fry the stems in a little oil. Add the leaves and some minced garlic. Finish with a sprinkle of kosher salt and a pinch of white pepper.
Thatβs it; 90 seconds and youβre done.
It doesnβt look like much. It vaguely resembles dandelions.
But the stems are crunchy, salty and sweet - and the leaves stand up to a quick stir fry better than regular spinach.
In the old days when Twitter was fun and people there were generally nice, I would talk about good sometimes.
