The same dish is $15 in a good Chinese resto. I don’t know why. It just is.

Anyway, Taiwanese spinach might be the best spinach. I say β€œmight” because I am certain I have not eaten all the spinach.

All you do is wash it and dry it. Cut the roots off and ducaed. Cut the stems into pieces and tear the leaves.

Flash fry the stems in a little oil. Add the leaves and some minced garlic. Finish with a sprinkle of kosher salt and a pinch of white pepper.

That’s it; 90 seconds and you’re done.

It doesn’t look like much. It vaguely resembles dandelions.

But the stems are crunchy, salty and sweet - and the leaves stand up to a quick stir fry better than regular spinach.
