talked myself into cleaning my kitchen. it really is the thing my days revolve around.
restaurants earn accolades, and chefs live their dreams. the scale of meat production and consumption matters immensely, and ultimately a vegan utopia is a really beautiful vision.
anyway, like i said - i think about this a lot.
as a result of that effort, i eat significantly more vegetables and significantly less meat (and sugar, and salt!) than i ever have. small farmers live their dreams. small markets where they sell grow, and revitalize neighborhoods. we learn each other's names.
as a chef, i just try to make the best food i can, from the best ingredients i can, purchased from people i've greeted by name, produced on farms i've walked with my own feet. and then i use every bit of it.
but also, if all calories originate with plants, how is there any justification for taking a life for food beyond "well, i like it", in circumstances where access to plant calories is unfettered?
meat animals are bred to be killed and eaten, and i see the exploitation there - i also think it's exactly what they'd be doing if humanity disappeared. fucking, eating, being eaten. so the ethical question, to me, becomes scale: how many animals, raised in which conditions, to feed how many people?
we are responsible for what we purchase and the thought we put into doing so. i'm very conscientious of where the meat i cook with comes from, and it's not commodity - i know the ranchers. living things eat meat. even plants, which are the origin of every calorie we've ever consumed as a species.
there is discourse around veganism as a natural continuation of activism - is all life sacred and deserving of non-exploitation, or do one's ethics carve a niche for animals? - and i think about it a lot.
