In my reading 'Ewing Young, Master Trapper', it was finally revealed that the Trappers often ate beaver meat, because they had trapped a bunch of beaver. In better times they had Venison, fish, fowl, etc. But, I learned that Beaver Tail was considered a delicacy. Who would have known!?
