I'd be remiss not to recommend one of the Monster Ranchers. Ultra Kaiju on the Switch is one of the most beginner-friendly.

Sitting down and considering fantasy species archetypes I'd put in a completely self-indulgent worldbuilding project built entirely to my preferences. Orcs get in free, obviously, but there's definitely gotta be a Plant Guy and a Construct guy. Maybe both at once. PF2's "conrasu" sound so cool.

Several Fire Emblems new and old go that route to varying degrees of success. I'd also tried the Agarest War series after hearing that generational progression was a defining feature, but unfortunately that one didn't grab me enough to reach that point. Plus there's always stuff like Crusader Kings.

Allowing you to write your own custom combat barks and callouts is one of the coolest things a game can do. All the more incredible when it actually vocalizes them as written in the audio, as it does in Freedom Wars.

I should open every D&D session like this
(Reinhard's character selection quote--objectively, randomized tutorial text--was "Take the bow from an archer, and he can fight no longer." But knowing what happened at Ziekden Fortress, Reinhard himself being an archer--his story became as clear as if Square themselves had told it to me.)
For me this is the seed at the heart of games with custom characters--or even individual mechanics, like the enemy soldiers of Final Fantasy Tactics, randomly named from a huge pool, who can be Talked into joining you.
What was that conversation? What made Reinhard the archer turn away at Ziekden?
In my experience, games that give you tools to tell yourself stories can be just as memorable and powerful as games built entirely around more direct storytelling.
