Had you previously had covid? We know there's a link with Covid. Having said that we are all wired to look for a "cause" & thus blame spurious things. Maybe for those with a strong predilection to DM T1, stimulation of immune reaction can trigger it
The scale was very obvious in the 80s re MMR. It's really not a new thing. Almost every parent was anxious about MMR then. What is different is the effect of social media which in effect means all opinions are equally valid (even though they aren't)

Personally I think you are mistaken that "forced" is the key driver of antivax.
In the 80s No one was forced to give their child MMR but there were plenty of antivaxers around it.
Antivax activism goes right back to Jenners time
I agree we need to attempt to understand the antivaxers & other conspiracy stuff. Psychologically I suspect it fills the same space that religion did ie providing certainty & agency in an uncertain world in which individuals are powerless
You may very well think that hospitals would prevent her working if she has flu. Unfortunately that is not always the case. Anyone undertaking clinical training knows immunisation is part of the requirement. It's simply putting patient safety first
While we wait to see if she finds having flu unpleasant enough to get vaccinated she infects any number of vulnerable patients.
Mandatory vaccination has long been a requirement in health professions for that reason
