I use this one generally. I use a 50/50 mix of AP and pastry flour though. Definitely do the grated butter step. It’s the magic. I also make sure not to work the dough too much. And then I freeze the scones for at least an hour before baking if not longer. sallysbakingaddiction.com/scones-recipe/
