That is, arguments rage about whether mapo tofu should be made with Pixian doubanjiang or douchi. I have and love both as ingredients, but I cannot love the douchi style. Whenever I order it and it's made with douchi I am sitting there wishing I were on the moon (where I am right now).

(a) I never have all the best ingredients at the same time, until today.
