If I remember correctly, the ancestor record isn't actually fetched from the server or anything, but is reconstructed based on the record you tried to save and the record the server has. There might be a local cache involved as well, but I'm not sure. That might explain the behavior you're seeing.
I forget all the rules for the ancestor record, but it sounds like you've done some sleuthing into this.
