I've seen enough footage of launchers being destroyed and tunnels being filled in that I'll readily attribute some of it to a change in capacity. Assuming that our estimates are in the same galaxy as reality, we've destroyed a massive portion of their launch capacity in the past few days.

I disagree. Iran's propaganda (difficult to know how true it is for this reason) has been adamant that they had the stockpiles to keep the pressure up for weeks to months. That level of slowdown implies that destruction of delivery systems at least has been effective.
