langextract supports both OpenAI and Ollama out of the box, meaning you can send your local documents locally to local inference.
One document processing job in production now used langextract in a container on openshift. Nothing left the cluster.

Like docling, you can swap out any LLM you want. The workflow here isn't to make workarounds (at least not any more than you would need with skills dot md). This is a repeatable, traceable pipeline. Skills dot md can break in 6 months.
