Case of fish harvested from the river. Left to right: shrimp, empty cavity where there were oysters, steugeon filets, columbia river salmkn, and lastly columbia chinook. Pretty pricey but I think everything they get respects catch limits heavily so the price makes sense. Sturgeon has a VERY small catch limit to help maintain populations. Probably why I didnt know you could eat the meat.

@swoz.bsky.social took us east of town yesterday to follow the Columbia river and we had sturgeon for the first time ever.

It was mild in flavor but meaty like swordfish. Very unexpected and fished from the waters right by the place.
